The top of the range, and a rotating slot rather than a fixed coffee: the lot changes but the quality bar stays. The opening release is a Pink Bourbon from Finca Las Flores in Pitalito, Colombia, grown at 1,750 metres by brothers Johan and Diego Vergara. Selective harvesting, then staged anaerobic fermentations, oxidation and a brief thermal shock before drying, with decaffeination by Descafecol. Clove, pink pepper, ginger and roses. Worth checking the current lot before you order, because it will not be this one forever.

Nott Coffee is the decaf sub-brand of Danelaw Coffee, a Yorkshire roastery run by Dave Wilson, who also runs Bjorn Speciality Coffee in Holmfirth. Nott is Old Norse for night. The whole range is decaffeinated using the sugarcane process and every coffee is sold whole bean or ground to order for cafetiere, filter or moka. Between them the range has taken Great Taste awards every year since 2023.
