The Fruit Fermentation and Decaffeination Process

Las Palmas undergoes a highly specialized process to ensure both flavor retention and natural decaffeination. Initially, the beans are exposed to a 120-hour anaerobic fermentation using passion fruit pulp, which enhances their fruity character. This is followed by the EA (Ethyl Acetate) Sugarcane Decaffeination method, which is an entirely natural process.

The decaffeination starts with steaming the beans to open their pores. The coffee is then soaked in a natural solution of ethyl acetate derived from fermented sugarcane, which binds with the caffeine and effectively removes it. This technique ensures that the coffee remains 97% caffeine-free while keeping its bold, rich flavors intact.

After decaffeination, the beans are dried back to their original moisture levels, ensuring consistency in roasting. The end result is a decaffeinated coffee that doesn’t compromise on taste, offering the complexity and vibrancy you’d expect from a fully caffeinated brew.

This natural process is not only gentle on the beans but also preserves the integrity of the coffee’s natural flavours, making it a top choice for those seeking high-quality decaf.
