This decaf coffee is sourced from the Jalapa region of Guatemala, a high-altitude area known for producing exceptional coffee. It is a regional blend of beans from Marvin Carias and neighbouring farmers, grown at altitudes of 1,600–1,700 MASL. The varieties include Bourbon, Caturra, Catuai, and Pache, which are carefully cultivated to ensure quality and consistency. Marvin Carias, who operates a wet mill in the region, is meticulous about accepting only the ripest cherries, ensuring the highest standards of production. The washed processing method enhances the coffee’s clean and vibrant profile, while the CO2 decaffeination process preserves the beans’ natural flavours. This method uses compressed carbon dioxide to remove caffeine, maintaining the integrity of the flavour compounds without reintroducing them artificially. The result is a decaf coffee with a rich and satisfying flavour profile, featuring notes of dark chocolate, orange, and hazelnut.

Decaffeination Process
