This Mexican decaf coffee originates from the Frailesca region in Chiapas, cultivated at elevations between 1,200 and 1,800 MASL. The coffee is grown within the El Triunfo Biosphere Reserve, a region renowned for its biodiversity and mineral-rich soils, which contribute to the coffee’s distinctive flavour profile. The varieties Typica, Mundo Novo, and Bourbon are carefully nurtured under favourable growing conditions, ensuring a high-quality crop. The coffee undergoes the washed process, a meticulous method that involves sorting cherries through flotation tanks, pulping, fermenting, and washing away the mucilage to ensure clarity and consistency in the final cup. This attention to detail preserves the coffee’s natural sweetness and highlights its rich complexity. The medium roast enhances its inherent characteristics, resulting in a decaf coffee with pronounced notes of caramel, dark chocolate, and hazelnut. This offering exemplifies the dedication of Mexican producers to quality and sustainability in coffee cultivation.

Decaffeination Process
Decaffeinated using the Mountain Water Process, which utilises pure water from Pico de Orizaba and natural charcoal carbon filters. This method removes 99.9% of caffeine while preserving the coffee’s rich flavour characteristics.
